Orange "milk rice" cake

Ingredients
  

  • Basis:
  • 250 g Granola
  • 50 g Date mass
  • Orange juice
  • Cream:
  • 1 l Plant-based milk
  • 3 tbsp Date mass
  • 350 g Rice
  • Jelly:
  • 2 bags Vegan gelatin
  • 6 dl Orange juice

Instructions
 

  • Base dough:
  • First grind the granola.
  • In a bowl, mix the date mass with a little water to get a thinner form.
  • Then add the ground granola and orange juice as needed to the mass.
  • Blend it all together with a stick blender. Blend until you get a moldable mass.
  • Spread the mass obtained in this way into the cake mold.
  • If you put baking paper in the bottom of the mold beforehand, it will be easier to remove the slices when cutting.
  • Cream:
  • Add the date mass and rice to plant-based milk and cook until soft.
  • After cooking, blend a little with a stick blender.
  • Taste it, if necessary, sweeten it with a little more date mass.
  • Then put this in the cake pan, on the cake plate.
  • After that, put it in the fridge while you prepare the gelatin.
  • Garnish:
  • I personally just put a bunch of mint leaves on it.
  • The orange jelly and the little green mint on top give it such a fresh look that I felt this amount of decoration was just enough.
